Summary/Objective Assist the Food and Beverage Director in the operation of kitchens, restaurants, bars, catering and events.
Essential Functions Supervises (with assistance from Outlet Supervisors), three restaurants in season.
Responsible for:
Hiring of Outlet Supervisors, Servers, bartenders and support staff.
Training of Outlet Supervisors, Servers, bartenders and support staff.
Scheduling of Outlet Supervisors, Servers, bartenders and support staff.
Responsible for beverage ordering, inventory control and purchase requisitions Responsible for booking entertainment for the outlets.
Under minimal supervision assists the Food and Beverage Director with:
Creation of menu of four (4) locations.
Cost controls including labor, food and beverage costs in all outlets and kitchen.
Assuring high levels of customer service in all outlets.
Maintaining outlet maintenance and cleanliness.

compliance and food handling by staff.
Assists in the administration of the Point of Sale system.
Assumes operational responsibility of entire Food and Beverage division in the absence of the Director, Food and Beverage.
Supervisory Responsibility This position manages employees of the all outlets and is responsible for leadership, performance management and hiring of the employees within its department.
Position Type/Expected Hours of Work This is a full-time position.
Typical days and hours of work are Monday through Sunday.
The schedule is varied with a minimum of 45 hours per week required.
Required Education and Experience Previous management experience, including forecasting, scheduling and real-time operations management.
Experience supervising, coaching and developing staff.
